Simple Summer Suppers

This Memorial Day weekend we find ourselves feeling very thankful to be surrounded by family and friends, to be safe in our home and to be hugging our daughter close.

This weekend we will celebrate with a picnic and enjoy time together as a family. We are looking forward to eating outdoors and enjoying the fresh produce that's in season.

After renting in Houston for a couple of years, I decided to make West Houston my home and purchased a house. Owning a home can certainly be more work than renting, but for me and my family, there are so many benefits to owning our own home. One of our favorite parts of our home is our backyard garden. This year is especially rewarding as we get to teach our daughter about gardening.

This Spring, we planted our herb garden and it's a fun activity for our daughter to get to water the herbs daily and watch them grow. She loves rubbing her fingers on the herbs and smelling their lovely scents. She also even picks off some of the leaves and eats them. It's so nice when we're short on time to be able to pick something fresh from the garden and make a quick homemade dish/meal. One of the best parts of summer is dinner suddenly becoming much easier.

My favorite ingredients are fresh fruits, veggies and herbs which are all at their peak during the summertime. Dill, thyme, oregano, mint - we love the aromatic herbs lining our garden path and love how they transform the most simple recipe into something special.

This tzatziki sauce is a great recipe for showcasing summer cucumbers and fresh herbs. It's rich, creamy and packed with flavor. So mix it up, serve with a big plate of warm pita or your favorite summer veggies, add to grilled salmon or kabob to elevate your dish and there you have it, a delicious, easy dinner!
